Movie audio commentary tracks have so much promise, but I don’t think any of the ones I’ve listened to have delivered. Sure, we get some interesting anecdotes and behind-the-scenes discussion, but nothing that wouldn’t have been better and more effectively delivered in a simple interview or other format.

The best out there, by far, are by Jackson, Walsh, and Boyens for the LotR movies. Yeah, there are some actor and on-set anecdotes, but there are also a lot of neat conversation about the struggle of translation, what they thought Tolkien's stories were about, stuff like that.
PotC 2: Dead Man's Chest, has an excellent commentary track from the two writers. It's so good that I was really frustrated to learn that it's not continued on #3!
I've been meaning to track down a del Torro commentary track for Hellboy 2 and Pan's Labyrinth. The guy gives amazing interviews, and I'd be curious to see what he has to say about each scene of his movies.
